Instructions

  1. Toast spices & nuts: In a dry pan, toast cloves, allspice, and almonds until fragrant. Cool. Toast nutmeg piece briefly if using.
  2. Infuse: Combine rum, lime zest, ginger, toasted almonds, and spices in a jar. Seal, shake, steep ~24 hours in a cool dark place, agitating a few times. Do not leave lime zest much longer or bitterness creeps in.
  3. Strain: Fine-mesh + cheesecloth or coffee filter. Press solids gently.
  4. Syrup: Dissolve sugar in water over medium heat. Cool. Stir in almond extract if using.
  5. Finish: Combine infusion and syrup. Add lime juice if you want a brighter, Velvet-style profile. Bottle; rest a few days. Refrigerate.
