Citrus Super Juice
Bar prep | Kitchen scale required | Weeks in the fridge, a month+ in the freezer
Fresh lime juice tastes amazing for about 36 hours, then it starts tasting like a wet battery. Super juice keeps the pep — peel oils + powdered acids + water + the fruit’s own juice — so you are not juicing six limes every time someone wants a Daiquiri.
What you are actually making
Bartender Nickle Morris (Expo, Louisville) popularized this as super juice. You pull essential oils from the peels with powdered citric and malic acid (an “oleo citrate” — cousin to oleo saccharum, but with acid instead of sugar), blend with water and the squeezed juice, strain, and bottle. You get several times more usable juice from the same fruit, brighter aromatic oils, and way slower flavor death than naked fresh juice.
You need a kitchen scale. Cups lie about peels. Grams do not.
What you need
- Lemons and/or limes (wash well; remove wax if present)
- Food-grade citric acid powder (homebrew / canning aisle / online)
- Food-grade malic acid powder (for lime — the “green apple” tang that makes lime taste like lime)
- Filtered water
- Scale, peeler, blender or immersion blender, fine strainer / cheesecloth / nut-milk bag
- Clean bottles (sanitize like you mean it if you want maximum fridge life)
The formulas (by peel weight)
Weigh the peels. Everything else is a multiple of that weight.
Lime super juice
- Citric acid = 0.66 × peel weight
- Malic acid = 0.33 × peel weight
- Water = 16.66 × peel weight
- Plus all the juice from those peeled limes
Lemon super juice
- Citric acid = 1.0 × peel weight (lemon is citric-forward; skip malic, or use a tiny pinch if you like)
- Water = 16.66 × peel weight
- Plus all the juice from those peeled lemons
Worked example (~100 g peels)
- Lime: 66 g citric + 33 g malic + 1,666 g water (~1.67 L) + juice from the fruit
- Lemon: 100 g citric + 1,666 g water + juice from the fruit
~6–10 limes or ~6 lemons often land near that peel weight. Weigh yours; do not guess.
Method
- Wash & peel: Wide strips with a sharp peeler. Leave the bitter white pith behind as much as you can. Pith is how super juice learns to taste like regret.
- Weigh peels and calculate acids + water.
- Make oleo citrate: Toss peels with the acid powders in a jar. Shake or muddle gently so every peel is coated. Rest 1–2 hours. The acids pull the oils; peels look wet and a little alien. That is success.
- Juice the naked fruit while you wait.
- Blend: Peels + oleo citrate slurry + fresh juice + water into a blender (rinse the jar with some of the water so you do not leave flavor behind). Blend ~30–60 seconds until acids dissolve and peels are broken up.
- Strain hard: Cheesecloth, nut-milk bag, or fine filter. Press, but do not force bitter sludge through. Bottle cold.
- Use 1:1 in place of fresh lemon or lime juice in Daiquiris, Margaritas, Whiskey Sours, lemonade, etc. Taste once — if it is a touch sharp, a bar spoon of simple syrup in the drink usually settles it.
How long does it last? (Honest version)
- Fresh-squeezed juice: Best in 1–2 days. Lime especially falls off a cliff.
- Super juice, refrigerated: Typically excellent for ~10–14 days; many batches stay usable 2–3 weeks if cold, clean, and sealed. Toward a full month is possible for careful batches, but taste before you serve guests — when it turns metallic or flat, retire it.
- Frozen: Easily a month or more. Freeze in ice-cube trays or small bottles; thaw in the fridge. This is the reliable “lasts a month” path.
Why it lasts longer: less pulp drama, more stable acid profile, and a ton of aromatic oil (plus ascorbic acid hanging out in the peels) fighting oxidation. It is not shelf-stable at room temp. Fridge or freezer only.
Tips for pushing fridge life
- Sanitize bottles; keep air space small
- Always cold; do not leave the bottle on the bar all night
- Use clean pour spouts — double-dipping spoons inoculates your science project
- Label with the date like a responsible adult
- Optional: a pinch of ascorbic acid (vitamin C powder) for antioxidant insurance
